Ingredients
4 cups seedless watermelon, cubed and chilled
1 large English cucumber, sliced into half-moons
½ cup block feta cheese, crumbled
¼ cup fresh mint leaves, chopped (or basil)
2 tbsp fresh lime juice
1 tbsp extra-virgin olive oil
1 tsp honey (optional)
Salt and freshly ground black pepper to taste
Instructions
In a large bowl, combine the cubed watermelon and sliced cucumber.
Sprinkle chopped mint or basil over the fruit and gently toss.
In a small bowl, whisk together lime juice, olive oil, honey (if using), salt, and pepper.
Pour the dressing over the salad and toss lightly to combine.
Crumble feta cheese over the top just before serving.
Serve chilled, and garnish with extra herbs if desired.
Notes
For best results, prep ingredients ahead but combine and dress just before serving to avoid sogginess. Optional add-ins: red onion, arugula, or olives for extra flavor and texture.
